Bolognaise (Ragu) - 4 servings
- 450g lean minced beef
- 3 tbsp olive oil
- 1 onion, finely chopped
- 2 carrots, grated
- 2 cloves garlic, chopped
- 2 400g cans Italian, chopped tomatoes
- 2 bay leaves
- 2 tbsp tomato purée
- Salt & pepper
|Step 1: Heat the oil in a large saucepan, then add the onion, carrot, basil and bay leaves and fry gently over a medium heat until the onion has softened slightly.
|Step 2: Add the beef and fry for a few minutes, turning, to brown well.
|Step 3: Add the tomatoes, tomato puree, salt, pepper and red wine, stir well.
|Step 4: Bring to a boil, then reduce the heat to low, cover and cook 2-4 hours.
