Turnip Soup with Daikon

Turnips and their greens are healthy for you in a variety of ways and are a great source of vitamins A, C, K, calcium and iron. This recipe will use two medium sized turnips and their greens, one daikon, one onion, five cloves of garlic, one tomato, and 3 chili peppers which are optional. It will serve 6-8 people.
Total Preparation and/or Cooking Time: 47 Minutes
Step 1:
Gather your ingredients and be sure the turnips and the turnip greens are well washed. Soaking the greens in a basin of water will help insure this.

Peel and dice the onion.

And the garlic.

Step 4:
Add some water to a medium large stock pot and set it to medium high heat, then add the onions and garlic to simmer.

While the onions and garlic are cooking go ahead and cut the turnips.

And the daikon.

Then add them to the pot and stir.

Step 8:
Next add in the turnip greens. It is nice to leave them large and un-chopped so just give them a tear or two with your hands as you add them. Don't worry if they overfill the pot, they will shrink down as they cook and lose water.

Step 9:
Once the greens have started to shrink, add water on top and let the mixture come to a boil.

Step 10:
Then chop and add the tomato, and the chilies, and let the soup boil for another 5-10 minutes. In this soup the vegetables do not get over cooked, so don't let the soup boil too long.

Step 11:
You now have a completed turnip soup. Garnish with lemon juice or vinegar, chili flakes are also recommended.
